My fingers are all stained from pitting cherries by hand just now. I had some fruit I needed to use up, so I came up with this:
1 pint cherries, pitted (aprx.)
1/2 pint blackberries
1/2 apple
1 T corn starch
1/3 c sugar
1/4 c cold butter
2/3 c brown sugar
1/4 c almond meal
1/3 c oats
dash cinnamon
dash salt
Mix the fruit with the corn starch and sugar. Pour into the bottom of a baking dish. Cut the butter into the other dry ingredients and put on top of the fruit. Bake at 350 degrees until top is brown and fruit is bubbly (20 to 30 min).
Mmmm... bubbly fruit...
